haha, silly..

first week of ministry has been nothing less than exhausting. good, but exhausting. we’ve been on and off campus quite a bit, in meetings, hanging out with students.
the life.
i’m starting to get adjusted to what life on staff is going to look like for us. it’s definitely going to be filled with ups and downs, but i’m thankful that i get to do this job and see God change lives.
he’s big and our plans are so small. he can do so much at FSU and its a matter of me stepping aside and ridding myself of the pride, the need for approval or the need to be praised and channel all that into giving God the complete glory that he deserves.
i’m so grateful that he is the one that is in control and not me. i’d fail miserably if that were the case.

today was a great day! first cru meeting of the semester. 294 people counted at the meeting!
it was so fun meeting all the new students and sort of reliving my experience as a student at the same time. kinda nostalgic. anyway, today was a better food day. no cookies ha.

i had 2 eggs and egg whites for breakfast. i also ate a bowl of kashi go lean cereal with non fat milk.

scott and i split a banana for a snack while we were on campus and i also ate a couple ounces of slices chicken meat and some almonds.

for lunch i had a morning star tomato and basil veggie burger. oh so yum. with some crackers and cheese.

i had some red snapper for dinner that i seasoned with olive oil, salt n pepper, rosemary and oregano. it was so good! i had sauteed veggies and brown rice too!

before dinner i had a big ole fuji apple and every bite was so dang good.

i drank a ton of water today which is why i feel like i could float away at the point.

tonight was also the start of kickboxing and it was SO fun but so hard too. I burned roughly 700/cal in one hour. that’s a lot people. A LOT. that’s why i love it. a great workout in only one hour for less than $2.

tomorrow we have an early start. hope everyone’s week is going well!

the rest of the day was quite successful minus the publix irresistible chocolate chip cookies that were offered to me. uggggh. can’t say no, just can’t.
anyway, i’m movin on….you just hate to, no since in beating yourself dead over it.

after lunch i was still hungry but i waited to eat a snack for a while, and ate a banana with a little pb on it, my leftover yogurt and a few whole grain crackers and hummus. a third meal if you will. being in the sun all day made me hungry people, don’t judge.

anyway, tomorrow begins kickboxing! also no more cookies.

if you have any yummy healthy on the go snacks, please share!

some of my favorites include:
dried fruits
almonds
whole grain crackers
big fuji apples
yogurt
sliced meats
clif bars
protein shake
sunflower seeds
any fruit pretty much

anyone ever feel like once you give into a sweet you’ve failed? how do we resist feeling that way so that we don’t get back into a slump? it’s easy to do right?

good afternoon friends! hope everyone’s monday is going great! today has been so lovely in tallahassee. the cool air is sticking around i couldn’t be more thankful! the heat and humidity is taking on toll on me for sure!

i woke up early this morning and did day 13 of the book! crazy stuff today….so many push ups.
i also tagged on a mile run at the end and took 40 seconds off yesterday’s time. that’s good right?

before i left i had another slice of 12 grain toast with pb. it was yum. then came home and had the yogurt combo again.

for lunch i had a whole wheat pita with chicken and grilled veggies. i also ate an apple and a handful of almonds.

i’ve drank 48 oz of water so far! tomorrow starts kickboxing so that is great news! i love that class and more friends are joining in!

ahh sundays, i do love them.
i woke up early and did my gym routine before church, and i was thankful i bit the bullet and did it cause otherwise it wouldn’t have happened, lets be honest.
i did the 12th day of the jillian michaels workout book and it was pretty tough. i ran a mile afterwards which was good…burned roughly 500 calories or so.

before i worked out i ate a piece of ww toast with natural pb and half a banana. drank a glass of water as well.

i came home and had 1/2 c of greek chobani greek yogurt and topped it with a raspberry sauce that was made with frozen berries, some water and a little sugar. (boil it until you have the right consistency you like! super easy and so yum)

for lunch i had a boars head chicken sandwich on ww bread with hummus and spicy mustard.

my camera battery died so the other things i took pictures of won’t be on here but i had leftover chicken breast for lunch as well.
an apple for a snack and some all natural pop’s chips.

plus my friend kathleen made us a delish dinner including garlic salmon, mashed sweet potatoes and grilled cauliflower.

i also drank about 60 oz of water today too, resulting in many trips to the bathroom.

i should’ve had more of a snack but i didn’t pack one because i didn’t think we’d be out all day, but i would normally have had more to eat than i did.

i hope you all enjoyed your sunday. today i think we even had a hint of fall in the air. it was cooler outside with slightly less humidity and that makes for a great day!

so some friends of mine and i have decided its time…

time to shed some more lb’s.
the two of them are in a wedding in october and i want to lose mmm 10-15 lbs.
between being really conscience of what i eat and adding to what i do at the gym i am hoping to achieve this goal. i have lost quite a bit since this time last year actually, but haven’t seen much change since spring.
i want to live healthy, eat the things i know my body wants and stay active and enjoy it all and i am doing this now at about 95% but i need to kick it up a notch ;)
i’m going to attempt to use this for a little while as an accountability tool, plus keep documenting life as i go, but journaling what you eat has always been helpful to me!
i’ll try not to overwhelm the blog with food :)

the year that begins in the middle.

we are beginning the fall semester at fsu now and it’s exciting and scary all
at the same time. students are here and we have begun to plan the first week
of activities for freshman that are moving into the dorms.
being on staff is different but at the same time i am totally reminded of
my years in college when i helped plan for this very week.
we are expectant and we have such willing students which is a huge blessing.
God wants to use us on the campus to help change lives and that’s really exciting.
most of the time i feel unworthy and ill-equipped for this job, but then i’m gently
reminded that God uses broken people to bring himself glory. thank goodness.
i love that he loves those that we don’t know how to love, and that he wants an
intimate relationship with every student at FSU and in the world. i’m grateful to
be a small part of what God is doing.

in our family, birthdays last all week.

**that cake was made from scratch just so you know. it was yum.
**we have great friends who we love to spend time with and they came to celebrate scotts life!
**we had pulled pork sandwiches, fruit, cheese and crackers, and chips with an assortment of dips.
**i made the family punch and we mingled.
**we finished the night off with some americas funniest home videos and laughed at a lot of people doing horribly embarrassing things.
** thanks to our friends who came over to celebrate.
(happy bday to you again, my love.)
